Pumpkin Spice Cookies

Two-ingredient cookies are a blessing. Last Christmas, I made Key Lime Cool Whip cookies. They were MAGICAL. Honestly, when I make these two ingredient cookies, it's all about the batter and not about the cookies. What I like about these cookies is that they taste like little cakes. That means that they're very moist and will pair will with ice cream. Some people do these cookies filled with chocolate chips, some pair it with a cream cheese frosting.


These cookies are incredibly easy to make.
Ingredients:
  • 1 box spice cake mix
  • 1 can pumpkin puree
Directions:
1. Mix ingredients in a bowl
2. Grease a cookie sheet and preheat the oven to 350 degrees
3. Bake for 18 minutes and let cool for 5 minutes



Pumpkin and spice cake mix makes pumpkin spice... it's the cookie of the "typical white girl!" Happy holidays!

RECIPE: PUMPKIN SPICE STUFFED KIBBEH

Tis the season for pumpkin spice.. and kibbeh. As you know, I have a special place in my heart for mediterranean food; my diet consists of spinach and feta mostly. So, I thought I'd venture off and try a new mediterranean specialty: kibbeh. Kibbeh is a Levantine dish made of bulgur (cracked wheat), onions, garlick, and whatever else floats your boat. Some choose a savory option, I chose to go down a sweet path this time, in the spirit of fall. This kibbeh dish pairs well with vanilla greek yogurt. Enjoy!


All of the ingredients in a bowl look like I'm making pumpkin bread. It's very promising. 


This is the filling: pinto beans, tomatoes, spinach, feta, and olive oil. 



Who said pumpkin and spinach can't play together nicely?


Pumpkin Spice Stuffed Kibbeh
Ingredients:
For kibbeh:
  • 1 cup bulgur
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 can pumpkin, pureed
  • 2 1/2 teaspoons olive oil
  • 1 tsp ground cumin
  • 1/2 cup water
  • 1 egg
For filling:
  • 1/2 cup spinach
  • 1/2 cup feta cheese
  • 1/4 cup chickpeas
  • 1/4 cup pinto beans
  • 1 medium onion, chopped

Directions:
1. Preheat oven to 350
2. Rinse the bulgur
3.Chop the onion
4. Combine drained bulgar, cumin, salt, pumpkin, egg, olive oil, and cinnamon in a bowl and mix well
5. Caramelize the onion in a sauté pan
6. Combine the spinach, feta, chickpeas, and pinto beans to the pan after the onion caramelizes
7. Oil a 9 x 13 baking dish and lay the kibbeh mixture on the pan, sparing some
8. Once the filling is done cooking, lay it on top of the kibbeh mixture
9. Layer more kibbeh on top of the filling
10. Bake for 5-7 minutes
11. Enjoy!

Happy September, and happy new school year my lovelies! It's time to buckle down on the books and sip our newly released pumpkin spiced lattes. However we can't buckle down if we have nothing to strive for, right? That's why I'm joining my blogger friend Angie from mysocalledchaos.com for her monthly "goals" link-up. Here are some goals I wish to accomplished this lovely month of September.


September 2014 Goals
  • Starting using and utilizing my planner more
  • Be more thorough with things, don't rush
  • Start off the semester with all A's this month
  • Run sub-22:50 at theUMass Darmouth race
  • Start lifting 40 lbs
  • Do free-writes twice a week
  • Get in 8 hrs a week at work

  • Become A-list on the Kim K game (very important)

LIFESTYLE: FO SHO CLEAN DONUTS

I was browsing Bed, Bath & Beyond my mother one day. I didn't direly need anything, however I knew that some friends and bloggers mentioned finding little donut pans there. They are mold for donuts. I loved the idea of getting creative with "clean" donuts. I found a pan, and I made a recipe, and boom! Being the holiday season I found it appropriate to make these pumpkin pie inspired donuts. They're scrumptious as ever and don't have a trace of processed sugar or pumpkin puree. Enjoy!


Ingredients:
- 2 eggs
- 1 cup almond flour
- 2 tbsp honey
- 1/2 tsp vanilla extract
- 1/3 cup greek yogurt
- 1/4 tbsp baking soda
- 1 tsp pumpkin pie spice
- 4 packets of stevia
- 1/4 cup almond milk

*these measurements make 6-8

bake at 350 for 20 min, and enjoy these tasty morsels!
