Easy and Delicious Weeknight Taco Recipe for When You'd Rather Drink Your Own Tears Than Cook Dinner

Hi friends! Let's be honest and real here. When we get home, we're ravenous. We would rather eat the closest available foot than break out a sauce pan and boil some water. I know for a fact that it's not just me. Isn't that why they invented Amy's pad thai?

However, why microwave mediocre rice noodles when you can have TACO BOATS! That's right... boats that are tacos. Meaty and cheesy goodness floating on a sea of salsa. Okay, maybe not like that. Thanks to Old El Paso's Old El Paso Soft Tortilla Taco Boat Dinner Kit it was easier than ever to whip up some taco boats after the gym this Wednesday night.

I wanted something quick and delicious. I didn't want to be basic and microwave something, however. Then, I remembered that Old El Paso was nice enough to let me try their Old El Paso Soft Tortilla Taco Boat Dinner Kit! I remembered that I bought some chipotle-marinated chicken from Whole Foods last Friday.

The flavorful combination for my Wednesday night dinner: marinated chicken, Brandless black bean and corn salsa, peppers and onions, Frank's red hot, and a Old El Paso Soft Tortilla Taco Boat Dinner Kit.


Mexican food is one of my favorite pastimes, I would definitely say that I have it too much. What's easier than rice, beans, veggies and sauces,  I thought? Nothing! That is the ONLY ANSWER!


I let these ingredients simmer in the taco sauce that came with the taco boats until the veggies were tender and the meat was cooked. The next step is insultingly easy - place the filling the taco boats and top with salsa and cheese. A fun trick that I was too hungry to try was toasting the flour taco boats for an extra bit of crispiness that a corn shell would give you. Let me know if you try it!


Yes, those are tears of joy. Dinner alas, at 8:30PM.

 

This is an actual picture of me post-tacos. Look at her, she's glowing. Her brows are filled, her hair is wavy, she's serving business casual looks, and she's smiling. She hasn't smiled in years. She hasn't smiled that wide since Hilary Duff dropped Metamorphosis.

You're probably (not) wondering the recipe for this genius and intricate recipe.


Ingredients

2. 1/2 chicken breast, marinated how you like
3. 1/3 an onion
4. 1/2 a green pepper
5. Old El Paso taco Sauce
6. Shredded cheese

Steps
1. Sautee pepper, onion chicken and taco sauce in a pan on medium heat until veggies are soft and chicken is cooked
2. Place the above mixture into the taco bowls
3. Top with Brandless salsa, a dash of frank's red hot and a sprinkle of cheese.

TURN ONE MEAL INTO TWO WITH ANNIES MAC N CHEESE

As a busy college student, Annie's Mac n Cheese is a godsend. There's something about toiling over research papers and planning programming for a student-run radio station and a public relations student group that makes me crave pasta. However, I want to stay as healthy as possible, of course. That's where Annie's comes in. It's organic, nutritious and delicious. 

However, part of healthy eating is variety. You can eat fruit your whole life, however you need some form of protein. You can eat PB&J your whole life, but you need vitamins and minerals. That's why I leverage the easy-to-make Annies and mix it with beans, tomatoes, fresh veggies, and protein to stretch one box into at least two meals.


Today I'll show you how I spice up the organic shells & real aged cheddar.


Chicken, spinach, and pasta are some of my favorite things to eat. The other day, I actually had spanakopita for breakfast, a broth bowl with spinach in it for lunch, and spinach and beans topped with scallops for dinner. I may actually turn into spinach.

I combined this pasta with spinach and ground chicken. In a pan, I sauteed the ground chicken with some Mrs. Dash until it browned. I simultaneously had water boiling. When the water came to a boil, I added the pasta. Once the chicken was browned, I added a handful of spinach in the pan and let it wilt. By that time, the pasta was cooked so I combined the cheese mix, milk, and butter as according to the package. After it sit and absorbed, I added the chicken and spinach. Voila!

This will make enough for two meals: one for now, one for later.


Here, I added tomatoes and pinto beans into the Organic Shells & White Cheddar mix.

ALI'S KITCHEN 1: THAI CHICKEN CURRY

One very important thing that they teach us in communications school is transparency and honesty. I'm going to be very honest with you guys: I did not come up with this recipe or cook this. For this whole series, Ali's Kitchen, I will not. That's why it's named after my roommate, Ali.


This is Ali. She's a bio major, but has a real passion for cooking. Upon move in day, once I saw all her cool cooking and baking equipment, I was instantly psyched. This girl brought more cooking equipment than clothes to school, and I love her for that. She brought matcha powder, a cake pop maker, a mini cake pan, saffron oil, curry paste, and way, way more. Ali's Kitchen Installment 1

Since moving in, she's already made strawberry rhubarb pie, and this delicious chicken curry. Who needs a boyfriend when you have a roommate that cooks for you?


Chicken Curry
Ingredients:
  • 1 cup of brown rice brown rice 
  • 5 chicken tenders 
  • 1 tbsp safflower oil
  • 3 heapings green curry paste
  • 2 heapings chili Paste
  • pinch of s alt
  • 1/2 tsp ground ginger
  • 1 can organic coconut Milk
  • 2 cups of water
  • chickpeas
  • 1 bunch swiss chard
  • 2 shallots thinly sliced
Directions:
  1. Prepare the brown rice according to the box you bought or however you'd like. I like to be lazy and buy the 1 minute microwave cups!
  2. Cut the chicken and swiss chard into the size you desire.
  3. Sautee the chicken for 5-7 minutes in the safflower oil, add shallots and sautee for another 5-6 minutes.
  4. Simmer the the chickpeas, green curry paste, coconut milk, water, chili paste, salt, and ginger in a saucepan for 20 minutes.
  5. Mix in the swiss chard and let simmer for another 15 minutes.
  6. Layer the brown rice and curry mixture in a bowl.
  7. Enjoy!

RECIPE: SWEET AND SIMPLE BBQ SAUCE

Ever want something to spice up your bbq? I recently did, and I did exactly that. However, I didn't quite SPICE it up, it was more of a sweet upgrade than anything. I love mixing different flavors to see how they react to each other in my cooking. I also love reducing flavors in heat and seeing how they react. These two tricks played out in this BBQ sauce upgrade between the cumin and the cinnamon.


Cumin is native to the Mediterranean near India. Coming from seeds originally, it has a robust flavor that can be described as bitter. It has a strong, warm aroma. Cinnamon, has an equally as strong aroma, however the word to use with cinnamon is obviously sweet. I expected these two to mellow each other out, and the steak rub to add that extra kick. I also love when sweet flavors carmelize out in cooking.


The olive oil made the mixture more fluid so it would be easier to spread, and it would melt into the chicken easier.

We put the BBQ sauce on the chicken for the last ten minutes of cooking time so that it doesn't burn off. We also drizzled some EVOO right before they went on the grill to help the cooking process.



SWEET AND SIMPLE BBQ SAUCE

INGREDIENTS: All ingredients can be your brand of choice. Recipe good for 4 breasts.
  • Bbq sauce, 3 tbsp
  • 1 tbsp of cumin
  • 1 tbsp of cinnamon
  • 1 tbsp of steak rub
  • 2 tbsp EVOO 
DIRECTIONS
  1. Combine BBQ sauce, cumin, cinnamon, and rub in a bowl.
  2. Whisk the EVOO in until it is a smooth texture
  3. Drizzle the chicken breasts with EVOO 
  4. Place them on the hot grill and cook them for 10 minutes, flip a few times
  5. Spread the BBQ sauce mixture over the chicken 
  6. Cook for another 10 minutes, flip a few more times
  7. Make sure it is cooked all the way through
  8. Enjoy!

LIFESTYLE: PRESTO PESTO

Ah, I've missed doing recipes. Between me living in a dorm and being busy, I haven't really had time to do one! I apologize. However, between Mother's Day, and my mother's birthday on Saturday, May 17, two appliances have recently been brought into the house. Both were gifts from me, to my mother.

They're both Hamilton Beach. One is a high-powered blender, and the other is a food processor. Now, I can make all of the smoothie, cauliflower pizzas, clean ice cream, and cookie dough bites I want! Also, that means I can share all of the recipes with you!

One of my favorite sauces recently is a pesto. At first, it may sound and look unappealing, but it is earthy and warm, a tad spicy and overall delectable! My mother picked up some ingredients at Trader Joes today while I was at work, and when I came home we got cookin'!

Here is the recipe for our Italian Pesto Chicken dinner. You can use these ideas on how to serve it, or just use the pesto recipe if you'd like!

Nikki and Karen's Italian Pesto Chicken

Chicken:
  • 4 chicken breasts
  • salt and pepper
  • Goya seasoning

Pesto:
  • 1 cup pine nuts
  • 1/2 Extra Virgin Olive Oil
  • Basil
  • Parsley
  • Parmesan Cheese

Vegetables:
  • Snow Peas
  • Asparagus
  • Mushrooms
  • Onions
Cooking:
We grilled on our outdoor grill, but a stove top can do the trick. Grill the chicken until there's no more pink, and make sure you rub it with salt, pepper, and Goya for the perfect taste. It was a bit sweet and spicy.
For the vegetables, we grilled them in a pan with goat cheese until fully cooked.

Pesto:
As for the Pesto, it couldn't have been easier! Just combine the pine nuts, oil, herbs, and cheese in the bowl of a food processor (or blender), and process until it's the consistency you'd like.

Voila! If I were you, I'd make extra pesto for next-day use. Boil up some whole grain pasta or spaghetti squash and use it on that!

Even better idea: clean chicken parmesan. Use the same recipe for the chicken, but melt some mozzarella cheese over the pesto. My mouth is already watering! Then, you use the leftover pesto on either the spaghetti squash or whole grain pasta. I'm a genius, I know, I've been told.
